MATURING LOCATION

UnderSea Cellar

Oku Irozaki off Nakagi, Minamiizu Town, Kamo District

The submarine storage area faces the national park, and is off the coast of Nakagi, Okuishi Corridor, which boasts some of the most transparent waters in Izu, where the natural environment is preserved.
With the cooperation of the local fishermen's cooperative centered on the Nakagi Marine Center, we decided to use such a wonderful place.Hirizo Beach, which is known as Nakagi to those in the know, becomes a rough sea in winter, and is thought to vibrate the wine and affect its aging in the bottle. In addition, the cold water pouring in from the Nakagi River keeps the seawater temperature lower than the open sea.

This passionate Syrah red wine, which has begun to be seen and welcomed in distant Japan, shares its fate with the regular wine waiting to be aged in a cellar on the ground, and now it is investigating the effects of the waves of the azure Izu sea.
While listening, I dream of a day when it matures gently and falls asleep for a while. The beautiful contrast between the blue of the Izu sea, the pine forests of the scattered islands, and the scenery off the coast of Cape, the hometown of SUBRINA, will imbue SUBRINA with the memory of the sea of my hometown.
