HISTORY

SUBRINA, with its special story of aging at the bottom of the sea, is a project that began in 2011 and continues to evolve every minute, just like the vintages of wine.

2011

Initiated drafting, research, and testing related to undersea aging.

It all started in Okinawa. It was a fisherman who told us that sake tastes better when it is submerged in the sea.
The sake was stored under a shelf in a coral field. We were so impressed by the taste that we decided to launch the "Venus Project" in 2011, in order to clarify the mechanism of aging by the sea and to share this experience with other people.

Submarine cellar is set up at Nakaki, Minami-Izu.
After testing, ACT1 wine was selected as South African Syrah.

The undersea wine cellar is located in Minami I⾖naka⽊, Shizuoka Prefecture, on the edge of a national park, where nature remains in its natural state. The site is located at a depth of 15 meters next to one of Japan's most beautiful beaches, Hirizo Beach. Research revealed that Nakaki is a rough sea where ripening sounds occur frequently, a factor for optimum seabed ripening, and the cold water from the Nakaki River keeps the water temperature low, maintaining a suitable environment for wine ripening.

After several years of researching various red wines, the red wine that matured the best was a red wine made from a noble grape variety with concentrated fruit. This was our first encounter with South African Syrah.

2013

Conducted comparative tasting sessions for sommeliers nationwide to verify changes in undersea aging.

he "Comparison tasting of normal SUBRINA aged in an above-ground cellar vs. submarine-aged SUBRINA" was well received by many professionals who are familiar with wine.

Launched the Undersea Aging Alcohol Project (hosted by Shusaron).

In collaboration with Mr. Nobuhiro Ueno, a specialist in aged Japanese sake (Sake-cha-ron), we launched the Undersea Aged Sake Project. Approximately 4,000 bottles of sake were stored at the bottom of the sea.

2019

Began transactions with Graceland Vineyards.

Graceland Vineyards are located in the Golden Triangle region of Stellenbosch, internationally recognized as the best red wine soil in South Africa. We were amazed at the quality of the wines, and the deal was made possible as an ACT2 winery.

2020

Released ACT2 2016.

Launched our STORY (web journal).

Won the Silver Medal at the International Wine Challenge (IWC).

It was the first submarine-aged wine in the world to win a Silver Medal at the world's most influential wine competition held annually in London.
