The red wine SUBRINA, aged in the seabed off Hirizo Beach, one of Japan’s most beautiful seas, offers not only delicious taste but also the story nurtured by the great nature of the sea.

Upon opening the box, a faint scent of the sea wafts out. The vintage feel of the bottle, adorned with calcareous algae and barnacles unique to the seabed, creates an atmosphere as if spending time by the seaside.

With a wine glass in hand, take a deep breath.

SUBRINA, born as Japan’s first undersea aged wine in 2011.

The idea of commercializing undersea aged wine began when the founder, Aoki’s diving master, presented him with a bottle of red wine aged underwater. It was an unparalleled aging method, not seen in Japan or anywhere else in the world.

The master, while engaged in coral planting and conservation activities, hung various liquors under the coral preservation shelves as a hobby, teaching,
"When you let the liquor sleep underwater, it becomes mellow and delicious."

The presented wine, despite being stored underwater for over a year in summer temperatures exceeding 30 degrees Celsius, tasted soft and rich without any deterioration. Deeply impressed by the ocean’s influence, Aoki started SUBRINA to share this sensation with many people.

Since then, Aoki himself obtained qualifications as a sommelier, diver, and liquor seller, chose the beautiful sea of Minami-Izu as the place, collaborated with professionals well-versed in wines globally, discovered "South African Syrah" suitable for aging, and explored techniques to prevent seawater from entering the bottles despite rough seas.

Today, together with local divers in Minami-Izu, we conduct underwater storage during the off-season in winter each year.

When considering what makes delicious liquor, it is not just the taste of the five flavors. Every type of liquor has its own deliciousness, not just from its taste but also from the enjoyable memories spent with the liquor. SUBRINA believes that “delicious” is felt through such experiences.
